Low Carb Zucchini Chips
1/2 bag of pork rinds
1/4 c of Parmesan cheese
few shakes of Italian seasoning
2 eggs
1 good size zucchini (I think mine was about 12 inches long)
Put the pork rinds in a zip lock bag and crush with a rolling pin. Then add cheese and seasoning; and give the bag a shake. Beat the 2 eggs; I added just a little bit of almond milk, but I don't think you'd need too.
Cut up the zucchini into slices. Place them in the egg mixture and then into the pork rinds. Coat each side. Place on a greased cookie sheet (I sprayed mine with olive oil). Repeat until there is no more zucchini! :) Bake in a preheated oven at 425 degrees. Bake for 8-9 minutes, then flip. Continue baking for another 8-9 minutes.
These were seriously SOOOO yummy!
As for the marinara....I browned some hamburger (I use at least 1 pound, usually a pound and a half); while this is browning I usually add a little onion too, added some tomato chunks, a few good shakes of Italian seasoning and a can of spaghetti sauce and wha la. Guess it isn't technically home made huh? But it is easy and YUMMY!
I have also just grated a zucchini in a sauce pan added a little butter and coconut oil and sauteed. Used that instead of spaghetti noodles and had some YUMMY spaghetti! Works great, it can get a little watery, but I just squeeze some of it out as I plate it. Place the "noodles" on the plate and then top with the marinara.

Thanks Mel! I Tried a sauteed zuchinni the other night. just sautee zuchinni with onion in pan with 2-3 tablespoons of olive oil. cook until done. add 2-3 tablespoons of Cream cheese. it is so good. i also added garlic powder and salt and pepper. that's another way to use your zuchinni!
